I am opening up a restaurant that it all about south american dishes. I wanted to call it " Gemma`s Gazpacho House" but that isnt the only thing we cook for our customers i need imediate help!!

Answer:
I think your first instincts about not including a specific dish in the name is right on. It will be too limiting. I would go for a name that would be identified immediately with South America. Not being an expert on the continent, I think I am quite representative of most people that will comprise your future client base. When I think of food and South America, I think of steaks. I would consider a name like Steers, Toro Toro, or something along those lines.
Keep it short. Gemma's should work just fine.

You need a restaurant name that is not intimidating. That is the main thing which blocks potential customers is that they think it will be "excessively south american"

You should make a name that need not reference the food. You can name a restaurant anything you want and serve anything you want. You need not connect the two.

Connecting the two is actually a very bad idea. I own a subway franchise, if that counts as owning a restaurant.
I also like just calling it Gemma's. It is an interesting and memorable name.
