Well that depends on you the cook I would suppose. If you like chicken with skin, then leave it on. If you don't like the skin the take it off. Whether you take it off before or after you cook again is up to you. I cook mine with the skin. then after I cook it, I take it off and my son eats it.

You should remove the skin after cooking, because it retains moisture in the meat as well as flavor. I personally do not eat the skin unless it is fried chicken which i seldom eat. Too many calories and can be gross sometimes. Before. It is just healthier for you can't lose. I only leave the skin on for fried chicken but abstain from eating that too often.
