i haven't tried - I don't know if you'll get them crisp - but try
taro
parsnip
pumpkin
yuca/casava
you have to pre-boil first before crisping
Banana Chips Cassava Chips
taro root- it has a nutty flavor. I've never tried cooking them in the oven, only deep fried. But I'm sure it's still delicious!
you can make fries out of zucchini ..breaded
Tapioca chips do taste good.
