cook 2 smoked turkey pieces, an onion a clove of garlic and 2quarts of water in a pressure pot for 25 minutes.
rinse a bag of glory greens (already "washed and trimmed" )and drop them into the boiling ham hock water.
add a table spoon of sugar and salt and pepper to taste.
put the lid on, and let the pressure build up until it "sings" then turn it off.
when it stops "singing" the greens are ready to eat.
SLICE COLLARD GREENS THINLY, SMALL ONION,3 CLOVES OF GARLIC, SMOKED TURKEY WINGS,BLACK PEPPER,AND SOME RED PEPPER FLAKES COOK FOR 40 MINUTES TILL DONE NAMASTE
These are the best greens ever! Start with 1 or 2 smoked turkey legs (Nebraska Brand have real good flavor and texture). Cook them in salted water for an hour. Get fresh greens, I use 2 bunches of collards and 1 of turnip (or mustard) greens for the best flavor. Be SURE to rinse them well or you'll have sand in there. You can chop them up or not, your preference. Add some garlic or garlic powder, a chopped onion, some salt (yes, more or it won't taste right), pepper, lawry's seasoning salt and a little cayenne if you like. After it all comes to a boil again, cook the mix on low for another 1-1/2 hours. Take out the turkey and pull the meat off the bones (it will be soft and easy to pull apart), put it back in the pot with the greens. You will have the best greens you ever ate, guaranteed! This is my special, secret recipe that everyone loves.
