Does anyonw know the recipe to a panamanian dish.It has beef strips,.bell pepper,onion,fresh garlic,and I think celery served over rice.

I don't know it with beef, I only have eaten it in Panama with chicken:


Rice with Chicken (Panama)
2 large chicken breasts and 2 thighs ? cup whole green olives
1 finely chopped onion 2 tablespoons capers (optional)
1 finely chopped green bell pepper ? cup raisins
2 tablespoons oil 2 teaspoons Worcestershire sauce
? teaspoon achiote spice* ? cup frozen peas
3 cups rice, uncooked salt to taste
? cup shredded carrots fresh cilantro

*achiote substitute - if you do not have a Latin American market, you can substitute the following mix: 1 ? tablespoons paprika, 1 tablespoon white vinegar, ? teaspoon dried oregano, 1 minced garlic clove and ? teaspoon ground cumin. Stir until well-blended. You can keep this in the refrigerator up to a month

Cook chicken with ? of the chopped onions, ? of the bell pepper, salt and 4 cups water. Cook until tender. Remove chicken and set aside. De-bone and shred chicken when it is cool enough to handle.
Strain broth and add enough water to measure 5 cups. Set aside.
In a large saucepan or Dutch oven, heat oil with achiote. Sauté remaining chopped onion and bell pepper until tender. Add rice, carrots, olives, capers, raisins, Worcestershire sauce, salt and 5 cups of broth. Cover and cook until the rice is tender, 25 to 30 minutes.
Stir in peas and cooked chicken pieces. Keep on low heat until ready to serve. Garnish with cilantro.

Panamanian Beef Empanadas [12 servings]

1 (15 ounce) box pillsbury ready-made pie crusts
3/4 lb ground beef
1 medium onion, diced
1 small bell pepper, diced
1 bay leaf
2 garlic cloves, diced
4 tablespoons oil
1/2 teaspoon oregano
1/4 cup chopped green chili peppers (or 1/2 tsp Tabasco)

Preheat oven to 400 degrees.
Filling:.
Place oil in skillet and brown the beef, then drain the grease.
Add rest of ingredients, cover and simmer for about 30 minutes. Remove the bay leaf.
If needed, add a little bit of flour to thicken the consistency of the filling. Salt and pepper to taste.
For Crust:.
Roll out on a lightly floured board-1/8th inch thick. Cut with cookie cutter or glass for appetizer sized empanadas. Use a small plate for luncheon size empanadas.
On each round, put about 1/2 teaspoon filling. Fold over and flute edges with fork. Brush tops with beaten egg. Bake at 400 degrees until the crust is golden brown.
You can also deep fry these in a deep fryer or in a deep skillet with enough oil to cover them. that's the way they eat them there, but baking is lower fat! But fried is sooo good! If frying don't brush the tops with egg!
