Hummus is a middle eastern dip made of chick peas....they are boiled untill really tender then mashed (or put in a food processor which is way easier!) you add Tahini (sesame seed paste), salt, lemon juice, garlic and olive oil and it is traditionally eaten with Pitta bread. Really tasty stuff!

You need boiled chickpeas, tahini (sesame seed paste), lemon juice (lots), garlic, spices and olive oil to decorate.
First you mash boiled chickpeas with tahini and lemon juice. You have to check the consistency and the taste by adding more lemon juice and salt, and some crushed garlic cloves. You can do it with a blender. When the paste is smooth and light in colour, put it on a serving plate. Decorate with freshly chopped parsley, cumin, crushed red hot peppers etc.
It's a delicious dip on its own and also served as a sidedish with bbq (kebaps).
