HERES THE RECiPE FOR THE MOFONqO iTSELf ( THE FILLiNGS ARE NUMEROUs AND YOU CANT MAkE ANYWAY YOU LiKE iT:
Ingredients:
(Plaintains with Pork Rinds)
3 green plaintains
1 teaspoon salt
1/2 lb. Crisp fried pork rinds
4 cups water
3 garlic cloves
1 tablespoon olive oil
Optional: fried bacon, lard or vegetable oil
Directions:
1. Peel plaintains. Cut into one inch slices. Soak for 15 minutes in salt and water. Drain well.
2. Heat fat or oil(350 degrees if you are using a deep fryer). Add plaintain slices and fry for 15 minutes but do not brown. Drain on paper towel.
3. In a mortar(for pounding), crush garlic cloves and sprinkle with salt, add olive oil to the mixture and keep pounding.
4. Crush a portion of the fried plaintains slices and the pork. Add some of the garlic and olive oil mixture and keep pounding.
5. Spoon the mixture and shape into two inch balls. Repeat steps 3 and 4 until you use all the ingredients.
6.Place in oven pan and keep warm until you are ready to serve.
Suggestions: Prepare chicken broth and pour over mofongo, so it will be juicy. Enjoy

1/8th Habanero pepper
2 C water
1 T tomato paste
1 Maggi cube [yes, they are available in US!]
1 T Lemon or lime juice
2 cloves garlic
Boil water. Mix-in Maggi.
Mix-in Peanut Butter until smooth.
Mix in tomato paste.
Add garlic, pepper, and any other veggies you want [onions, casava, bell peppers, green tomatoes, cabbage, etc].
Add lemon/lime juice in last 5 minutes of cooking.
It%26#039;s all done when the peanut oil begins to separate and rise to the top. serve with rice.

Moros y Christianos. I believe it was the national dish of cuba. Do a search on www.allrecipies.com(same with the other ideas) and you should get the recipie. Black beans, Rice, tomatoes w/ chillies, and spices.
Also Gallo Pinto- the national dish of Costa Rica. Very tasty! Black beans, Rice, Spices. Really good!
Mole Sauce. A mexican sauce that has chocolate powder in it. It%26#039;s really good over rice.
Borscht- Beet Soup from russia. The kind I especially like also has potato, Carrot, and a few other veggies so it isn%26#039;t bright purple. My mother made it for valentines day and cut the beets and potatos in heart shapes. REALLY good!
