Almost everything is cooked slowly. No stir fry here. Recipes from Oaxaca are great but so are the ones from Puebla, Sonora or Yucatán. Real Mexican food is very different from American-Mexican. Cooking methods?....well, most tamales are steamed, mexican flan is al ′ba?o María′ and there are some mayan dishes like cochinita pibil and a huge tamal called mucbipollo or pibe that are buried. Wood is used in many traditional dishes, instead of the conventional gas or electric stove.
I know, I know, I know......um, they use lots of peppers? Beef is shredded. Um, the use of tortillas?? Hmmmm

open flame,the food is cooked on a fire most of the time. Also they dig a hole add coals in and burry their food and cook it in the ground for a few hours!This depends though if they want that kind of meal. Some of the cities have rottiseries and they cook some of the best meat which is called tacos el pastor...It is so tender and flavorful. :)
Half frying and half cooked, well mostly cooked.Have you ask a mexican? Or have you been in a mexican restaurant? You can tell of what you order.
Mexico is a huge country with a very varied and interesting cuisine. I have only been to Oaxaca where they cook a lot of vegetables by charring them on an open flame. This gives them a delicious, smoky flavor. They make sauces by toasting and grinding lots of different seeds, peppers and spices, and blending them together. The food in Oaxaca is unlike any Mexican food you've ever tasted, and it is out of this world!
