first of all there are TONS of types of Indian cuisine, broadly divided into North indian and South indian.
for North Indian - very populr and yummy dishes include Palak paneer (spinach w cottage cheese), aloo ghobi (spicy potato and cauliflower), aloo, rajma masala(kidney bean curry), Paneer Jalfrazie (bellpeppers with cottage cheese ), spinach and lentil stew/curry, any eggplant, ladyfingers (bhindi) or chickpea (chana) dish.
Some good breads (roti) to try include puri, paratha, naan, dosai/thosai and chapati.
South Indian - Rasam, chicken vindaloo, Aviyal (Kerala yoghurt veggie curry), sambar (lentil based veggie curry)

Had you had Mulligatawny soup? It's sooo good. Ingredients include cloves, chicken, and golden raisins and curry. The golden raisins taste like honey drops. It's de-lish! Try it.

just take some grain and mash it with a rock and add water and some fish or corn... enjoy

Onion bahji
Meat Jalfarezi [ any meat]
Bhindi baji [ okra/ladies fingers]
Chili prawns [cooked with garlic,chilli,tumeric,add yogurt at end of cooking]
here are a few:
matar paneer(cheese cubes and peas)
aloo parantha(pancakes stuffed with potatoes) and yogurt
gobi parantha(pancakes stuffed with tiny portions of cauliflower) and yogurt
mooli parantha(pancakes stuffed with shredded radish) and achar(pickle)
kulche cholle ( chick peas and small pita type bread)
raj ma (red kidney beans with flavorful spices) and naan bread
there are many more , but the above are well liked by many.

Chicken Tikka or Tandoori Chicken: mild red curry dishes with yogurt sauce
Rogan Josh: a delcious lamb dish with subtle curry spice
puri: the puffed indian bread served with different chutneys and raita (a cucumber yogurt sauce)
palak paneer with nan
pani puri, all time favorite
