These cookies are moist and full of chocolate, they're really delicious. You'll probably want to throw away your old chocolate chip cookie recipe
INGREDIENTS
1/2 cup shortening
1/4 cup packed brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1 1/8 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 1/4 cups semisweet chocolate chipschips DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a mixing bowl, cream shortening and sugars. Add beaten egg and vanilla, mix well. Sift flour, baking soda and salt together. Stir into creamed mixture; blend thoroughly. Fold in chocolate chips.
Drop by teaspoon onto cookie sheets. Bake in oven for 6-9 minutes, depending on size. Do not overbake. Cookies should be a little brown around the edges when taken out. Let cookies cool for a few minutes before removing from baking sheet. Finish cooling on rack. NOTE: If you use miniature chocolate chips, you can decrease the amount needed in recipe from 11/4 cups to 1 cup and not affect the quality of the cookies I alays make these cokies there good
Corn Starch Cookies from Brazil
Now, I have to begin by saying that I'm not a big cookie person. I make an exception for these Brazilian corn starch cookies because they're REALLY fabulous...these guys are so light they melt in your mouth. They are a great favorite of Brazilians; everyone in my family seemed to have a favorite recipe. They're called Maizena cookies because that's the brand name for cornstarch in Brazil. These are made with cornstarch only. There are other recipes that use flour also.
2 cups cornstarch
1 cup sugar
1 egg
1/2 tsp salt
1 1/2 sticks of unsalted butter (that equals 12 Tbps)
Preheat oven to 375° F. Sift cornstarch, sugar and salt together, mix the egg and blend in the butter. Knead well. Let stand ten to fifteen minutes. I use a cookie press to drop them on a greased cookie sheet. It makes cookies in different shapes. But usually you shape them into balls in the palm of your hand and drop them on the greased cookie sheet. Then use the tines on a fork to make grooves on the cookies. They look really pretty that way. Some people like to shape the cookies into really tiny balls, others prefer them bigger. Bake for about seven minutes, depending on how big you make them. Let cool and serve with a wonderful cup of Brazilian coffee in the afternoon.
