Yes, you pretty much answered your question. There are heavy Middle Eastern, Mediterranean and East European influences.
Kosher food has it's roots in, what was available in the desert during the Exodus. Things that were available in Russia, Poland, the Near and Middle East and other locals where Jewish people have lived, have influenced the modern Kosher menus as much as Kosher laws have influenced the moder cuisine of these regions. But, I'm a gentile, what do I know?
Jewish cuisine comes from Hebrews and the book of Leviticus that tells what can and cannot be eaten. The food if Kosher must follow certain religious guide lines approve by the Rabbi. No pork, no meat and dairy mixing, cant eat certain animals or fish, or certain body parts...and it must be blessed by the Rabbi as well. Also the cuisine like any cultural food the receipes are passed down through generations.
