Answer:
Tahini is sesame seed paste used in Middle Eastern recipes.
Since seekh kebabs are Indian, I assume the yogurt "sauce" is also Indian. In India, cold "sauces" made from yogurt are called "raitas."
There are many variations to this sauce:
Refreshing Yoghurt raita
1 cup Greek or Indian yogurt (can use regular, but thick and creamy Indian or Greek style is best)
1 garlic clove, peeled & minced
1 tablespoon fresh lemon juice
cilantro leaves (a generous handful)
mint leaves (a generous handful)
Blend all the ingredients together until smooth.
i guess its called tahini. ingredients are olive oil, garlic and some other stuff.
Tzatziki Sauce
1 cup of pressed yogurt (bought or drained of liquid)
grated garlic (to your liking start with 1 clove)
1 tbsp lemon juice
2 tbsp olive oil
1/2 cucumber (grated and liquid drained) almost paste like
combine all ingredients in a bowl and refrigerate at least 1 hour before serving.
This is great perfect souvlaki and other grilled items
Thick yogurt is used,also called hung yogurt,tied in cheese cloth or muslin till part of the whey has drained out,not totally dry though,beat up the yogurt with a whisk or a fork to give a smooth consistency,add salt & a squeese of lemon juice,finely chopped cilantro , mint leaves,chopped onion,.a clove of galic ,a drop or two of fresh ginger juice ,wisk till well mixed & you are ready to serve,raita is also served with rice dishes cooked in various styles includng biryani.I make things easier for myself by roughly crushimg all the ingredients in a small handy pestle & mortar,saves having to chop.For a change,grated cucumber or white radish can also be mixed in.Raita also serves as a dip .

chilli powder (if you want)
corriander powder
mint sauce (mint jelly)
fresh finely chopped onions
(and if you had it with cucumber, then obviously add that!)
