What KEKKYGCM said----Dang I love Tamales. We make them every year at Christmas & New Years and freeze a few extra dozen that are well hidden in the bottom of the freezer. It's our "Stash" to hold us through till the next batch gets made.
PS: If you've never had Green Corn Tamales you don't know what you're missing. I never met a Tamale that I didn't like.
Its a "tamal" when its only one...ok! LOL Tamales are more than one...anyway...well its basically "masa" which you can usually buy allready prepared and you add melted lard baking powder, salt and cumin to it...for more flavor. Then you spread it onto a corn leaf thingy and fill it with chicken and mole or cheese and jalapeno slices...it varies.
first if you buy masa already prepared, you shouldn't have to add lard. It should be in there if not then it is one pound for every 5 pounds of masa. for red chili tamalies it is meat chili pods or red chili powder corn husks. that are most of the ingredients & salt

The meat used in traditional tamales comes from the heads of pigs or cows,especially the cheeksand chili powder. But the "masa" is made from corn meal,lime juice and water.
