Amchur is also known as Mango powder, Amchur is made from raw green mangoes that are cut, sun-dried, and pounded into powder. Mango powder is used much like lemon is used in Western cooking; but it gives food a tangy, sour taste without adding moisture. Its tart flavor is used as a souring agent in soups, dals, vegetable dishes and chutneys. It is also sprinkled over meats to tenderize them before cooking.
I have always strore bought my amchur and have no idea how to make it at home.
This is how i make my curry powder:
2 1/2 tb Corriander Seeds
2 ts Garlic Powder
1 tb Ground Cumin
2 ts Ground Tumeric
1 ts Ground Ginger
1 ts Chili Seasoning
1/2 ts Ground Allspice
1 tb Salt
1 tb Ground Black Pepper
1/2 tb Dry Mustard
1/4 ts Saffron
Dry roast each ingredient seperately and grind them to a fine powder.
Its hot so use it sparingly.
