also try cooking plantain inside the fish instead of frying it.
From my experience of working with 2 Jamaican ladies who could cook and I mean COOK, I really don't think there's any such thing as a healthy West Indian meal! Bloody delicious though, you'll die happy!
curried goat is really beautiful, but the range of salads is truely vast.!
well basically all west indian food is healthy providing that you dont cook it with tons of oil...
..you can have fish, goat, chicken, beef etc- and season it in a traditional way..
and cook them in a way which is healthy - baking, grilling rathe than frying everything.

served with traditional ackee, dumplins, callallo or gungo peas or just anything else you would like to eat. (all the above are very healthy.

And you could always go to a carribean food shop and see their samples of west indian foods,
...you could even ask them how to prepare it - they would always let you know.
but west indian food shops are hard to find and are mainly in the very cosmoppliton areas such as: peckham, brixton, bromley, lewisham, well basically south and east london.
Rice and Peas, Curry goat's not bad, roasted breadfruit and all the fruit and soup.Pretty much everything is healthy as long as its not high in salt and isn't fried in copius amounts of oil. :)
I would recommend jerk chicken made without the skin. Still very tasty. If you make rice and peas use half the recommended amount of reduced fat coconut milk and brown rice it still tastes very good. Add a load of youir favorite salad or veggies Tasty and healthy.
the healthiest west indian meal you can get must be stew-fish and johnny cake. it's basicly stewed fish heavily seasoned with stewed potatoes served in the broth. it's mostly water, fish, potatoes and seasoning.

you don't want to eat it without johnny cake though- you'll be really hungry otherwise.(johnny cake is cakey-bread/bready cake depending on how it's made)
