Answer:
It depends on which regions / part of China but mostly Chinese families gather toghter to have dinner on New Year Eve, as for in Guangzhou (Cantonese region), the following are the typical dishes for my family (I m still living with my parents and my bothers and sister-the in-laws and nephews + neice come to our home every New Year Eve to have dinner)

1) a whole steamed fish (fish sound as "yu" and "yu" also is the same pronounciation of another word as "surplus" - this is dish is wishing the family would have excess food and fortune bring forward to next year.
2) a whole chicken steamed or any other style of cooking, as main meat course.
3) braised mushroom with black moss and dried abalone or fish maw or dried oysters (serve with boiled lettuce)
4) Crispy Roast Pork (usually as appetizer)
5) Sauteed tiger prawns with garlic soy sauce or ketchup
6) Long boiled soup (pork bone + carrots + green raddish) or (Long boiled pork + lotus seed + Lily roots + dried figs + white fungus)
7) Sweet and sour pork (the typical dish for my family)
8) Stir fried cashew nuts with celery, onion, water chestnuts, green beans and black fungus
9) Braised spare ribs with garlic, wine and soy sauce

(for about 10 to 12 persons and serves with steamed rice)

As for dessert, usually, in an hour later the dinner, the family would have "Tong Yuan" together, a round sweet dumplings made with guluntus rice flour with sesame seed paste or yellow cane sugar cube (my mon like this one more) - Tong Yuan has a meanings - to get together, stick together, to meet again, enforce the family bonding. Below is a photo of tong yuan

We have a lot of special food for New Year like White turnip pudding, Tora rice pudding, coconut flavour sticky rice pudding - nin go (a main New Year food that we serve the guests whoever visit our home or my dad would prepare it and send to the relatives) deep fried crispy dumplings, deep fried crispy sesame balls as snaks. These New Year food would be ready before New Year Eve and would be served during the New Year month.

On the New Year Day, usually we would have vegetarian dishes but noadays, the modern families would have 1 vegetarian dish and then have meat dishes. Nin go usually would be our breakfast and afternoon snaks. Below you can find a photo of nin go in that site.

On the 2nd New Year Day, we would have a lot of good food like such as :
1) Braised Pig kunkles with pig tongue lettuce bedding with oyster sauce (mains would get lucky money like from gambling or stock market or other investments)
2) Braised dried scallops with sun dried oysters (ho si -sound like good market) + black moss (fat choy - means earn a big fortune) serve with boccorili this dish means good market + would earn big fortune.

At this moment.. I can think of only this, I would come back when some else come up in my mind again.

P.S. There are a lot of good recipes in below website and here is ts food culture page where you can find a photo of the white turnip pudding which is also a must have New Year food in Cantonese communities.

For the Chinese worldwide, a reunion dinner is held on New Year's Eve where members of the family, near and far, get together for celebration. The venue will usually be in the home or near the home of the most senior member of the family. The New Year's Eve dinner is very sumptuous and traditionally includes:

(1) Chicken.
(2) Fish.
(3) Buddha's delight, an elaborate vegetarian dish traditionally comprising 18 ingredients, is sometimes served by Chinese families on the eve and the first day of the New Year.
(4) Northerners serve dumplings as the main dish.
(5) Mandarin oranges are the most popular and most abundant fruit.
