Not only do they bake them but also make pies out of them that take like pumpkin pie. And as of late, they're being fried like french fries and even being mixed in with potatoes for a variety.
I don't think actual yams grow in the US. They grow in Africa and Asia. But the American sweet potato is similar. So basically people call sweet potatoes yams, even though they are two different vegetables. The flesh of a yam is white or pale yellow were as sweet potatoes are bright orange.
