Caterers buy just the pair of legs from their suppliers. The producers/farmers of frogs use the rest of the frog for further processing into animal feed.

Frogs are farmed like any other meat products we eat. So I see no problem with this. After all we also eat chcken - don't we.

Ok, what do Americans do with the parts of the cow they don't eat or serve in restaurants?
Have you ever eaten a cow's intestines, brains, kidneys?
Ok, sometimes you see cow's tongue in the supermarket. Sometimes a heart.
Cow's hooves are sold as dog's cheewies.
What about the rest of the cow?
Well, do you imagine that perhaps in France the rest of the frog could go into attractive dogs or cats eateries? Or perhaps, they're just thrown away to become 'dust to dust' again -
what does it matter? YOu always have a choice to NOT eat whatever animal you feel a distinct kinship with.
By the way: not all french people subsist on a diet of froglegs.
I believe they eat Chickens, too - and - I wonder what do they do with the parts of the chickens they don't eat?
For that matter, what do YOU do about the parts of anything YOU don't eat?

In South Louisiana we use the front legs and backs in a sauce picant', we waste nothing down here. Cest ce` Bon.
They use it to make frogburgers.
Use the remains in animal food.
I'm pretty sure that they are not allowed to chop there legs off in France anymore - the legs are imported from somewhere else, but cannot remember where
They send them to England so the frogs can claim disability benefit.
As a former chef who did prepare them, most of the ones on the market from wholesalers are from Thailand or Bangledesh or India.

As for tasting like chicken, that was probably started when someone eating them could not compare there flavour to any else, theey have not real taste and like other foods with limited or no real flavour take on the flavours of what there cooked with, that is why they are done in garlic, wine and spices, to add flavour not mask it.
