Without "Peruvian food", there would be no "french fries", since the potato and its many relatives all came from that part of the world.

Peruvian food today is every bit as yummy, though I had a hard time with the guinea pig. (It was delicious, but I mean to say, it was guinea pig! LOL)

Also had Chinese Peruvian food ("Chifa") in Callao.
I love Lomito Saltado.
We eat Peruvian food all the time because my wife is from Peru. (lucky me!!). My favorite dish is papas rellenas. I also really like lomo saltado and ceviche. We get Peruvian chiles from a Peruvian market. They have a different flavor than any you get in the US.
Yummy. My mouth is watering at the thought of good ceviche. Having been to Peru many times, I can tell you that it is nowhere near the Mexican version of ceviche and you must try the Peruvian to truly understand heaven in your mouth.

I love the yucca fries too, but mainly stick with ceviche. I'm not a fan of most of the other dishes (especially the green sauce), but I'm willing to try anything once. Guinea pig was not so good (very tough meat) and I was really disappointed with it since it was talked up so much.

I almost forgot to mention Pisco Sours! Yeah, not a food, but so much a part of the culture that it has to be mentioned. I tell you what, if you want to get knocked on your butt, this is a drink for you. Way stronger than it lets off.
I LOVE Peruvian food. The perfect meal: Inka Cola with Papas Huancaina and then Aji de Gallina. YUM!
