It is similar to Creole in the US, but with overtones of the Brazilian influence, African as it was a slave trade country from the French, and there are like Guyana alot of Indian and Chinese also brought to the country during colonization.
I have only had it a few time from a friend who's wife was from there, do a search for French Guyanese cuisine. It is now known a Suriname
