Iron Chef Winner's Japanese-Style Hamburgers
A recipe from Katsuyo Kobayashi and her book "Quick and Easy Japanese Cookbook". She defeated Iron Chef Chen Kenichi on the popular Food Network t.v. show "Iron Chef". Kobayashi-san claims she can make anyone into an Iron Chef!

time to make 40 min 15 min prep
14 ounces ground beef
1/2 teaspoon salt, to taste
ground black pepper
1/2 onion, chopped fine
vegetable oil (for frying)
1 egg
1/4 cup milk
1 cup breadcrumbs
2/3 cup water
3 tablespoons ketchup
1 tablespoon sake
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon butter
1. In a mixing bowl, season ground beef to taste with salt and pepper.
2. Heat a small amount of oil in saute pan and cook onion until tender.
3. In a small bowl, beat egg lightly; add milk, mixing well.
4. Stir in breadcrumbs and allow to rest.
5. Add onions and breadcrumbs to ground beef, working ingredients together with your hands.
6. Divide meat into fourths, and make a patty; toss back and forth to force air out.
7. Shape into burger shape.
8. Heat small amount of oil in skillet and cook burgers; cover pan, and simmer on medium-high heat until burgers cook done; then remove lid, reduce heat to medium, and cook till water disappears.
9. Remove from pan.
10. Add 2/3 cup water, ketchup, sake, Worcestershire sauce, soy sauce, and butter to pan; bring to boil.
11. Simmer till thickened.
12. Spoon sauce over burgers on plate.

3 tbsp ketchup
3 tbsp Worcestershire sauce
PREPARATION:
Chop onion finely. Heat vegetable oil in a frying pan and saute onion well and set aside. Put egg and milk in a bowl and mix well. Add breadcrumb in the bowl and mix lightly and set aside. Put beef in another bowl and add cooked onion and breadcrumb mixture in it. Season the beef mixture with salt and pepper. Mix the meat well with hands well. Make four meat balls and toss each ball from one hand to the other hand repeatedly. Make four hamburger patties and indent the center of each one with a finger. Heat oil in a pan and saute hamburgers over medium heat. Turn over and saute the other side. Add 1/4 cup of hot water in the pan and put lid and steam hamburgers for a few minutes. Remove the lid and cook until the water is gone. Transfer hamburgers into individual plates. Add ketchup and Worcestershire sauce in the pan after hamburgers are removed. Mix quickly over low heat to make sauce. Pour the sauce over hamburgers.
