there are two version, hard and soft tofoo. the difference is that the soft tofoo has more water content and its usaually use in soup and steam dishes. where as the hard tofoo is usually use in stir fry and stewed dishes
It is flat in taste and derive its flavour from other incredients and flavourings.
How to make it?
soak bean curd overnight.
blend it with water until fine
use a muslin cloth to squeeze the milk from the pulps
boil the milk to frothing point (becareful it will overflow with froth suddenly)
Add nigari or sea salt to coagulate the milk
spread muslin cloth over a perforated container and empty the coagulated milk over it. fold over the muslin cloth and place a flat object over it to further press the liquid water out of the muslin cloth
it will take a couple of hours to hardened and settle the tofoo
after that remove the tofoo and cut in to pieces
leave in fridge submerged in water
stay fresh for a week
