    What is glutinous rice flour? I thought rice didn't have any gluten?

Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

I saw this recipe for Japanese Mochi ice cream balls here..and it called for glutinous rice flour...

I typed it into my search engine and foudn this article. it's just sticky rice. glutin is not gluten.
A good example is the rice used in sushi, i cant remember what its called though, im being patriotic by getting drunk the day before memorial day!
By glutinous they mean sticky. I don't know why they call it glutinous, I've often wondered the same thing, maybe they don't have a word for sticky, who knows.
so have you done anything like search the information.??

Glutinous rice flour is just "sticky rice" flour.

Rice has no gluten in it.
It refers to the texture. Glutinous rice is short grained sticky rice, used in sweets and sometimes as a normal rice dish. The 'glutinous' refers to the high starch content not to gluten.

The flour is used in making sweet buns, dumplings and pancakes and is actually quite low in gluten. It cannot be used for western style bread etc because the gluten is too low.
Something that is glutinous is very sticky. The root word is glue, not gluten. Glutinous rice is a special rice which become very gluey when cooked.
That short-grained sticky rice is what you use to make sushi.
You can find it in the store just look for Short grained rice.

If you can't find it in the store, do what I did, I wanted to make Sushi at home once and I didn't understand how to prepare the rice that came with my sushi-making kit. So I went to an Asian restaurant and bought a couple take out boxes of white rice.
Came out perfectly!
