Well, the mole we make at home does not require peanut butter, or any mole recipe that i've known for that matter. I have a couple of recipes. Of course..they are not simple, if you want simple, buy the mole Do?a Maria can.
Mole Poblano
12 mulato chiles
10 ancho chiles
4 pasilla chiles
2 small chipotles
1 to 1-1/2 cups vegetable oil
2 tbs sesame seeds
2 ounces almonds, skin removed and toasted
2 slices white bread, crusts removed
1 ripe plantain
2 ounces raisins
6 pitted prunes
1 large white onion, sliced
2 large garlic cloves toasted
4 whole cloves
pinch of ground anise seeds
pinch of ground cinnamon
pinch of dried thyme
4 medium vine-ripened tomatoes, roasted, peeled and cored
2 corn tortillas, dried out overnight, and fried in 2 tbs vegetable oil
4 cups chicken stock
pinch of sugar
2 ounces mexican chocolate (preferably Ibarra brand)
salt to taste
1--toast the chiles, remove the stems and seeds, and soak in abundant boiling water for 30 minutes, the longer the better.
2--strain the c hiles and blend in the blender to make a chili paste, adding some of the soaking liquid to make the blades turn. Place the chiles in a bowl and set aside.
3--heat 2 tbs oil in an 8 inch saute pan. saute the sesame seeds, almonds, and bread until golden. strain any excess oil and drain on paper towels. place in the blender.
4--peel the plantain and cut into 1 inch pieces. heat 2 tbs of the vegetable oil in the same pan as in step 3 and saute the plantain for 5 to 6 minutes or until golden. remove from pan. add the raisins and prunes and cook for 3 to 4 minutes more. strain any excess oil and place the plantain mixture in the blender with the sesame seeds, almonds and bread.
5--heat 2 tbs of the oil in an 8 inch saute pan. saute the onions for 4 to 5 min's, add the garlic, and cook for 2 to 3 min's, or until onions are translucent. add the cloves, anise, cinnamon, and thyme and roasted tomatoes and cook for another 2 to 3 min's , stirring with a wooden spoon. strain any excess oil and place the spices in the blender with the rest of the ingredients. break up tortillas and blend, adding enough chicken stock to make the blades turn.
6--heat the remaining oil in large, thick bottomed pot. saute the chile puree for 4 to 5 min's over medium heat, stirring with a wooden spoon. add the blended ingredients and cook for another 4 to 5 min's, stirring occasionally. add the remaining chicken stock and a pinch of sugar, stirring well to incorporate it. simmer for 35 to 45 min's.
7--add the chocolate, stir to melt it, and mix well into the sauce. season to taste with salt, the mole should not be too sweet.
