Anyway, to answer the question, enchiladas and burritos aren't really in the oven that long - mostly just to let the cheese melt. They probably left some oil burning in a pan on top of the stove and it caught fire. We use oil (and lots of it) to fry the tortillas or to soften them for the enchiladas.
