The best is Kasumi, by far. These knives are made in Seki, Japan in the same style that a samurai sword would have been made. This city is renowned for their sword making craftsmanship. I own a 10 inch chef's knife, a paring knife, utility knife and a bread knife and I wouldn't trade them for anything else. Believe me, I thoroughly researched a variety of chef's knives and the like and came back to Kasumi each and everytime. They are a little more expensive than the others, but well worth it.

They have a shop in the Nishiki market in Kyoto and have been in operation since 1560. I had the distinct pleasure of buying one of their knives while I was on vacation in Japan this past October.
