Answer:
"Beef Internal Stew" is a Liberian favorite dish of mine from the continent of Africa (recipe link below), it sounds odd but is very yummy.

I'm a big fan, too, of Dora Wat (link below), an Ethiopian/Eritrean dish that features chicken meat and hard-boiled chicken eggs in the same sauce.

Don't forget Africa is a continent of 50 or so different countries, each with their own unique cuisine, so you ask a somewhat broad question!

OMG! Had a chicken stew in Kenya many years ago that Iv'e never been able to duplicate. Chicken, local greens, plantains, a local garlic and chile paste, and, to thicken it, freshly ground peanut butter. Killer!!

Chiken mwamba sauce with makemba( fried plantin banana) and other dishes cause I'm from Congo!
I really like lamb tagine dishes from Morocco - especially the ones with olives and/or preserved lemon.

I also love Tanzanian-style roti, which is a flat griddle-cooked bread filled with any number of different things. I like them filled with curried coconut chickpeas. Coastal East Africa has a lot of Indian and middle eastern influence in the cuisine due to historic spice trade routes.

An Ethiopian chicken stew with peanuts and okra was the spiciest dish I've ever eaten - and that's saying something!

fish sup/sauce made with coconut creme base/tomatoes/tamarind/ light curry spices-mostly tumeric
Eat w rice or sima(maize meal mush-like Italian cornmeal dish which I cant recall its name)
BTW the peanut butter in the stew in a west african dish even though you may have eaten it in Kenya-its not local toEast Africa

West African Lime Cake:

Ingredients:

2 1/2 tbsp. butter
2 eggs
Juice of 1 lime
1 1/2 c. flour
2 1/4 tsp. baking powder
Few chopped peanuts (optional)

Directions:

Cream the sugar and butter, add the well beaten eggs and the lime juice, then the flour and baking powder. Pour into greased and floured 8" square cake pan and bake at 350 degrees for 25 minutes, or until straw stuck into center comes out clean.
