I have a commercial stove in my house and it's kiling my pots, pans and utensils. What is the best brand and/or type of kitchen wear to use on this type of stove?
Answers:
Favorware makes some nice heavy duty cookware.
don't buy sets. buy your pot n pans one at a time and get good ones that you will use and enjoy.
don't get all non-stick, but have a few for eggs, sauces, etc. with some pots n pans, you'll want to use metal utensils (whisk, spoon, fork, etc)
get a heavy duty wok -- carbon steel
get the good heavy duty stuff
pay attention to handles and knobs -- are they oven safe, dishwasher safe, screw on, welded on...
watch out for screw on knobs -- the screws can rust.
screw on handles wear out -- not good.
welded on handles are better.
get a few that can work well in both the microwave and regular oven.
Some cast iron items are great for some things.
hope this helps
Other Answers:
all clad is what most restaurants use or you need to get some restaurant quality pans from a supply house.

All Clad is awesome, but very expensive. I have Calphalon and love them. Get some silicone spatulas, too. Check out these websites for some great stuff!
