First you have to decide if you like raw fish. I don't, except for salmon which is great smoked. If you do like raw fish, I would Ask the sushi chef what is most popular or a best seller. You can ask your friends but everyone's taste is different. Try a couple, you might share with someone so you can try more of what you might like. Almost everyone likes the California roll, it's a good basic to start out with. Now some sushi eaters will say, 'That's not real sushi!' but don't worry about them, some people love eating deep fried fish heads. Shrimp and salmon and crab and eel are my favorites. The eel is cooked in a great brown sauce. Also, I like the rice rolled inside the seaweed rather than on the outside, it's less likely to fall apart and just easier to eat. My favorite is the Caterpillar Roll. It has cooked eel (unagi), cucumber, a little bit of eggs (masago), and avacado on top. They usually make the roll actually look like a caterpillar! It is a great middle ground for beginners who don't wanna try raw fish, but want to experiment.
many people seem to like california roll. it has fried crab stick and avocado in it. sometimes topped with mayonaise.
dragon roll is also people's favorite, because instead of raw fish, it's filled with fried breaded shrimp.
i myself prefer the traditional salmon maki. raw salmon is the best for sushi.
