I put my eggs from the refrigerator into some water in a pan and then bring the water to a boil and turn the fire off. I leave the eggs in the boiling water for about 20 minutes and then pour the hot water off and put cool water over the eggs and let them sit a while in the cool water so that I don't get burned when I peel them. Sometimes pieces of egg white adhere to the shell when I peel them. What am I doing wrong? How do I prevent the egg shell from sticking to the egg white? 12-15 minutes should be enough for even very large eggs, otherwise you run the risk of having the eggs crack through the shells while they are boiling. To make them peel easily, add a fair amount of salt to the boiling water when you put the eggs in.
edit - if you aren't sure if the eggs are fully boiled, try taking one out and spinning it on a countertop--it should spin for a long time when it is fully boiled.

You are boiling it way too long. Everything else you are doing is fine for the most part. I put them in a pot of cold water and when the water starts boiling I set the timer for 8 minutes and they are done. I don't run them under cold water, so I don't know if that is what is causing yours to stick.

If you want eggs to peel easily, buy them a couple of weeks before you want to boil them. The newer the egg is, the harder it peels.

As the eggs age, air permeates the shell and comes between the egg whites and the membranes. For baking or scrambling, the fresher the eggs the better. For boiling, use eggs that are at least a week old.

AFTER YOU BOIL THE EGGS AND COOL THEM OFF BRAKE THE SHELL ON THE BOTTOM AND PEEL A LITTLE BIT OF SHELL OFF THEN DO THE SAME THING ON THE TOP THEN CUP THE EGG IN YOUR HANDS AND BLOW THROUGH THE TOP PART OF THE EGG THE AIR THAT YOU BLOW THROUGH THE EGG WILL SEPARATE THE SHELL FROM THE EGG AND THE SHELL WILL PEEL OFF EASLY. SOMETIMES THE EGG WILL COME OUT IN THE BOTTOM OF YOUR HAND. THE ONLY THING THAT YOU HAVE TO WATCH FOR IS THAT THE EGG IS HARD BOILED. Place the egg gently in deep pan, then poor tap water in the pan. Boiling eggs takes from 15 - 20 min. if you want it well done, if you want it less then minmize the duration on the cook, to avoid craking put either 1/2 tea spoon salt or some vinger in the water & it won't crack & won't stick to the shell
20 minutes?? thats wayy too much... it only takes about 8-10 minutes or else it wouldn't taste as well.
