I usually do eggplants in asian style curries and stir fry dishes. The trick to cooking them so they don't end up rubbery is to cook them hot and fast. A wok is a good tool for this kind of cooking.

Cut it into circles, sprinkle with salt and pepper, spray with oil, then grill on George Foreman.
Peal it and cut it in slices,take about 2-3 eggs,season and beat it,get some flour and dip it in the egg,then the flour and fry it on both sides till golden brown,after they are done put a little salt and enjoy!!! This is how I eat them!!
Peel it and cut it into half-inch cubes. Saute it with a little olive oil, your favorite spices and a bit of salt.

You'll know it's ready once the pieces start to look a bit translucent.

You could also add a couple cans of diced tomatoes to this mix to make a great pasta sauce.
You can google on recipe for eggplant - there are several out there.

A simple one is - barbecue eggplant - With a knife, make deep gashes on the eggplant, and put it in the oven, at 300 F or in the barbecue grill, for 10-15 minutes - till you can see the outer skin burn, don't let it char, but make sure outer skin is singed, and inside is cooked. Heat oil in a pan, and fry some onion, garlic and tomato. Scrape the eggplant from the skin - it would appear thick and gooey, and mix the eggplant, and the fried onion tomato (by hand wait till its cool enough). Put salt, and pepper, and there it is.

My Recipe
eggplant works very well in a veggie pasta...add some zuccini, carrots, tomatoes, whatever you feel like. Cut it up into small pieces and cook it with the rest of your veggies.
Catalan Style Eggplants

Ingredients
2 medium eggplants
4 tbsp olive oil
2 medium tomatoes
1 tsp paprika
2 cloves of garlic crushed
1 medium onion chopped
salt and pepper
chopped fresh parsley

Method:

1. Peel eggplants and cut into cubes

2. Heat the oil in a frying pan add the aubergine cubes and sauté for a few minutes

3. Add the chopped onion, crushed garlic and paprika to the eggplants in the frying pan and fry over a low heat for a further 5 mins

4. Add the chopped tomatoes season with salt and pepper

5. Cover the frying pan and cook for a further 15 minutes (checking that the eggplants is well cooked)

6. Place in a serving dish and garnish with a little chopped fresh parsley

my fav's are baba ganoush(spelling?)a dip , eggplant parmesan and deepfried greek style with Tzaziki
Sliced thin, breaded and fried crisp, covered with marinara & provolone and baked!
One of my fav recipes is eggplant parmesan. Cut eggplant into slices (skin off). Soak in lemon juice, water and salt for an hour in a container with a plate on top to keep it from floating to the top. Drain and dry with paper towells. Dredge in flour, shake off excess. Dip in beaten eggs mixed with a little milk then dredge in seasoned breadcrumbs. Fry in vegetable and olive oil until brown on both sides. Just takes a coulple of minutes. Take 1 jar of really good spaghetti sause like Classico and spread a thin layer in bottom of casserole dish layer eggplant and spread with thin layer of sauce then layer with sliced mozarella and provolone cheese. Repeat layers until casserole dish is about 3/4 way full. Last layer sprinkle parm and romano cheese on top and fresh chopped parsley. Bake until bubbling and aromatic. Let rest for 10 minutes before cutting and serving in squares. Serve with spaghetti topped with some of the sauce or tossed in olive oil fresh garlic and fresh basil. Fresh garlic bread a must.
Another one is ratatoulle. Saute onions, garlic, eggplant, carrots and tomatoes in olive oil. Add oregano, salt and pepper. Cook down to stew consistancy.
Frying with a special sauce to go with it
If you put spread some olive oil on the skin and the inside of the eggplant, you will get it the soften up.
Tomato base sauce is excellent for eggplant because the acidity of the tomato can chemically breakdown the rough/hard exterior of the eggplant.
I fry some onion in olive oil. Chop some egg plant up to inch wide pieces. Throw it in - you may need to add more oil as it absorbs it. You can add zuccini/courgette and mushroom too. Add lots of italian herbs after 5 minutes of gentle frying then a tin of chopped tomatoes. Cook for about 20 minutes or until soft - YUM!!
1) slice eggplants real thin. mix some salt, blk pepper,
cornstarch, deep fry for 2 min. very tasty, crispy on the outside, bit tender on the inside. deep fried eggplants.
2) cut eggplants bout 2 in. thick. remove center leaving bout 3/4 in. left. mic ground meats ie.turkey, chopped garlic, scallions, salt, pepper, or italian dressings, fill the hole w/stuffings. bake/grill/steam for 5-10/until done.
3) stuff hole w/fish paste (store bought from oriental markets in plastic jars), cook in curry noodle soups. v/yummy. or just slice up some eggplants, cook w/potatoes, & ur fav. veges..make a nice vege curry w/eggplants.
