I get this beef and broccoli from a local restaurant and I LOVE it! It has a "brown sauce" in it....just wondering what it is. Thanks in advance!
Answer:
It sounds like spicy garlic type sauce, the addition of soy sauce or oyster sauce gives it the lovely brown color
Here's a great recipe, adding the other veggies is optional.
RECIPE INGREDIENTS
2 cups water
2 cups broccoli florets
1/2 cup vegetable oil
1 pound boneless, lean beef, cut into strips
3 cloves garlic, chopped
1 tablespoon chopped fresh ginger (optional)
1/2 cup chopped scallions
1 red bell pepper, cored, seeded, and cut into strips
1/2 cup very thinly sliced carrots
1 1/2 cups sliced mushrooms
1 cup drained bamboo shoots
3 tablespoons oyster sauce or black bean sauce
2 teaspoons soy sauce, or more to taste
White rice, for serving
RECIPE METHOD
In a wok or large sauté pan over high heat, bring the water to a boil. Add the broccoli and cook for 2 minutes. Drain the broccoli, discarding the water. Set the broccoli aside.
Return the wok to medium-high heat. Add the oil to the wok and heat until the oil begins to shimmer. Add the beef strips and stir-fry until the beef changes color, about 1 minute. Remove the beef with a slotted spoon. Pour off all but 2 tablespoons of the oil.
Add the garlic and ginger to the wok and stir-fry for 1 minute. Add the broccoli, scallions, bell pepper, and carrots and stir-fry for 1 minute. Add the mushrooms and bamboo shoots and stir-fry for 1 minute. Return the beef to the wok and add the oyster or black bean sauce and soy sauce. Stir-fry for 1 minute, or until the beef is cooked through. Serve at once, with white rice.
It's usually a mix of either oyster sauce or hoisin sauce (or both), soy sauce, garlic, ginger, Chinese wine (Shao hsing)and cornstarch.
Soy Sauce
SOY SAUCE or Sometimes DUCK SAUCE, but Soy sauce is the brown one. It gives the rice so much flavor. Mmmn sounds good right about now!
I think the most common is soy sauce. If it's really salty, it's soy. I agree that garlic sauce is the next most likely. I personally think garlic sauce is yummier than soy.
there u go this has a few different ones have fun
If you have an ethnic section in your local market go to the Asian section and you can actually buy bottles that are labeled Asian Brown Sauce. It tastes like a thicker soy sauce but not exactly. Good luck
might be soy sauce
I am amazed at how many people think that "soy sauce" is the sauce you are talking about... It is NOT soy sauce as I am sure you already know !!
Stick with what "desi" said... it is a combination of oyster sauce, soy sauce, garlic & ginger. By adding some teriyaki or peanut butter, you get a whole different sauce trhat they serve but equally as tasty.
Experiment with these ingredients to get that flavor you are looking for.
Maybe oyster sauce, soy sauce or hoisin sauce.
