Being a former chef in Canada and having made many a different sausage over the years, some not all sausages are made with natural casings, which can be either lamb or pork intestines, the newest form is made from collegen which is a plant made material from seaweeds and soya products, these are fine for sausages made for both Muslim or Jewish people as they have no pork products in them, they look when empty to be almost paper like, but can be filled with any meat and even vegetable, I know of many Kosher places in Toronto Canada that use tem for hot dog style sausages and the kasha/veg based Kishka, a stuffed sausage like vegetable based food.
Bangers like sausages are made with intestines also known as collagen (skin)

Many sausage makers use the collagen casings because they are uniform and make for a more uniform product. The casings come in standardized sizes. Most fresh sausages such as Italian sausages and bratwurst are put in collagen casings.
And what is it that intestines are made of?
From what I was told by a store that sells both, the main difference is shelf life. The collagen casings can be bought & stored for a long time before use & don't require refrigeration until use.
Collagen casings are manufactured from the corium layer of split beef hides. There are some fibrous casings that are made from vegetable products but are not typically edible. Natural casings are the intestines from sheep and pigs, and sometimes beef. These have a lot of snap when you bite into them. So if your label says collagen that is probably what it is. But if you eat something and it seems to be kind of tough on the outside it is probably natural.
