Fusing, or combining, two different cooking styles or flavors that usually do not go together, like Thai-Brazilian or Caribbean-French. You use the defining aspects of each style of cooking (poaching, stir-frying, etc.) along w/ usualy and common ingredients of each (chili powder, ginger, white sauce, masa cornmeal, etc.) and mix them w/ the common cookign styles and flavors of another cuisine. Sometimes it works, sometimes it doesn't.
A combination of two or more cuisines. Most frequently used to describe a mixture of Chinese and Western cooking. For instance, here in NZ whitebait, oysters and crayfish are popular. A chow mein made with these ingredients would be fusion cuisine.
