Fusing, or combining, two different cooking styles or flavors that usually do not go together, like Thai-Brazilian or Caribbean-French. You use the defining aspects of each style of cooking (poaching, stir-frying, etc.) along w/ usualy and common ingredients of each (chili powder, ginger, white sauce, masa cornmeal, etc.) and mix them w/ the common cookign styles and flavors of another cuisine. Sometimes it works, sometimes it doesn't.
A combination of two or more cuisines. Most frequently used to describe a mixture of Chinese and Western cooking. For instance, here in NZ whitebait, oysters and crayfish are popular. A chow mein made with these ingredients would be fusion cuisine.
All fusion really means is the combination of different styles of food. Chinese fusion could have french influences....or american...etc. Generally fusion food happens where one area has a large population of an outside group. Where two cultures meet.
