It's the name of a dish but I dont know what the name means

BIRYANI

1 chicken, cut into pieces
1 c. yogurt
1/2 bunch cilantro
1 sm. green chili
1 tsp. ground red chili
1 1/2 tsp. salt
1/2 c. oil
2 med. onions
1/2 tsp. black cumin, ground
1/4 tsp. cinnamon powder
3 c. long grain rice (preferably Basmati)

Slice the onions thinly and fry them in 1/2 cup oil in a medium size pot until they get golden brown; take the onions out and put half of them on a paper towel and the rest in the blender. Add 1 cup yogurt, 1 green chili, 1/2 of cilantro of the 1/2 bunch, 1 1/2 teaspoons salt, 1 teaspoon ground red chili, 1/2 teaspoon ground black cumin, 1/4 teaspoon cinnamon powder in the blender; mix these ingredients in the blender.
Now put chicken in the pot. Cook in the oil for 5 minutes. Add the yogurt mixture from the blender into the pot with chicken and cook for about 10 minutes, stirring occasionally on low heat until chicken gets a little soft and the mixture has well blended with the chicken.

Now boil rice in 8 cups of water; drain. When the rice becomes soft but not very soft, rice should stiff(??) hot tender or drain it 5 minutes before it really cooked. Take half the rice out. Spread the chicken mixture over the rice and top and spread with the rest of rice. Sprinkle with onions and cilantro. Cover tightly and put it on very low heat to 20 to 30 minutes. The Biryani is done and ready to serve.

The name biryani or biriani (Urdu ?????? ;Hindi ???????) is derived[1] from the Persian word beryā(n) (?????) which means "fried" or "roasted". Biryani is a family of Middle Eastern, Southern Asian dishes made from a mixture of spices, rice (usually basmati), meat/vegetables and yogurt. There are many kinds of biryanis and each kind has a uniqueness about it. Pre-mixed biryani spices from different commercial names are easily available in markets these days, which reduces the preparation time though the taste differs considerably.

in india biryani is most popular and fav dish., very tasty, someting basmati(long rice) rice is fried with oil , spicy stuff with the content of chickens.

It is fried.but Indians actually saute the ingredients in oil.
Biryani is a rich rice dish made with chicken / mutton / fish / prawns and even vegetables. Biryani is cooked differently in different parts of India. But is always delicious wherever you eat it.
Like I said earlier rice is used in preparing it, but it is a superior quality long grained and very aromatic rice called Basmati that is used. It is cooked in Ghee ( clarified butter ), with a lot of nuts and spices. Pure saffron is mixed with milk and added to give the grains a nice yellow colour.The rice is layered with chicken or whatever biryani one is making.
After the rice and chicken etc are layered ( aldante ) the lid is put on the dish and the edges sealed with dough, this enables the flavour and aroma to stay trapped. Authentic biryani is made on fire wood, so for the final touch the pot is kept on burning ambers and the same are also placed on top of the lid for slow even cooking.
Muslims are famous for their biryanis and it is almost always served at all their weddings.
Biryani is served with a korma which is again a rich dish and a yogurt mixed with onions called raita and a brinjal preparation.
Biryan or Beryan is Persian for "roasted".
