I saw a segment on this food additive on either 20/20 or Dateline. Anyway, it's just bad for you, so I don't think anyone will recommend that you use it. It was actually discovered in Japan in 1909, to be used as a flavor enhancer. The theory is, spices are expensive, and by adding MSG to the food it amplifies the spices that you are using. Also, it acts as a preservative, which makes the food on a buffet appear fresher, longer.
But, as far as filling you up, this is the rice. Rice acts kind of like a sponge in your stomach, being that it continues to swell with the absorption of liquid. Also it goes with any meat that is available. Traditionally Asian cultures would take a small amount of a meat, slice it as thin as possible to spread it out in a rice or noodle mixture to "feed a lot with little".
So, I believe that it is the rice that is filling you up at a buffet.
