There are so many varieties of the "sweet and sour" chutney; here's one I use from a book by Suvir Saran:
1 tblsp canola (or saffola) oil
1 tsp cumin seeds
1 tsp ground ginger
1/2 tsp cayenne pepper
1/2 tsp fennel seeds
1/2 tsp asafetida (optional)
1/2 tsp garam masala
2 cups water
1 and 1/4 cups sugar
3 tblsp tamarind concentrate
You will find all these ingredients in Indian grocery stores.
To make the sauce, combine the oil and spices in a medium saucepan over medium-high heat and cook, stirring, for 1 minute.
Add the water, sugar and tamarind concentrate. Bring to a boil, turn the heat down, and simmer until it turns chocolaty brown and is thick enough to coat the back of the spoon. Takes about 20 minutes. Store in the refrigerator in a tightly closed container for up to 2 weeks.

It's a chutney that's sometimes made of just tamarind or sometimes from dates & tamarind. You can easily buy it pre-made at Indian grocery stores...or most times you can even buy it from Indian restaurants.

Its a sauce made with raisins.Its also called sweet chutney.when u eat samosa if u dip first in mint sauce and then in sweet sauce then it will be yummy but it can be done other way around too according to taste.
