I love Thai food, everytime I goto a thai restaurant and order chicken satay(chicken on sticks with peanut sauce), they have chicken on the plate, peanut sauce, and small cut vegetables in a clear sweet sauce, what is that clear sweet sauce that is on the side and how do you make it?
Answer:
Sweet and sour cucumber relish (Thang Kwa Preow Wan)? Here is the recipe.

1/2 cup (125 ml) vinegar
250g sugar
1 teaspoon salt
3 tablespoons water
1 small onion, finely diced
1 small carrot, finely chopped
1 green cucumber, finely chopped
fesh coriander leaves, chopped, to garnish
1) Boil vinegar, sugar, salt and water in a saucepan for 1 minute, mix onion, carrot and cucumbmer pieces in a serving bowl. Pour vinegar mixture over.
2) Taste to see if extra vinegar, sugar or salt is needed to balance flavours. For those who prefer a spicy cucumber relish, add a finely sliced chilli or some chilli paste.
3) Garnish with chopped coriander leaves. Serve with satay, fish cakes and crispy deep-fried snacks.
actually satay is a malay food.
was it a ginger sauce?
INGREDIENTS:
1/2 cup light soy sauce
1/4 cup red wine vinegar
2 teaspoons minced ginger
2 tablespoons brown sugar
2 spring onions (green onions, scallions), chopped (For decoration if you want it)
PREPARATION:
In a small bowl, combine the soy sauce, red wine vinegar and minced ginger. Set aside.
In a small heavy saucepan, melt the brown sugar on high heat, stirring rapidly, until it is just melted but not burnt.
Add the soy sauce and red wine mixture. Bring to boil until brown sugar is melted again (it will harden temporarily after the soy sauce mixture is added).
Remove from the heat, pour into a serving dish.
It's really good to use on lots of different items from spring rolls to pot-stickers. Anything!
PEANUT SAUCE OR CUCUMBER SALAD

I get to eat it all the time. My neighbor is from Thailand.
Whenever she cooks she is always bringing food over or inviting us to go eat at her house. She'd know exactly what you are talking about. Unfortunately, she is asleep right now.

The sauce is almost certainly made from rice wine vinegar with added sugar. So you had cucumber, my side dish , in Bangkok, had finely sliced green and red peppers in it. Mind blowing, but it did get rid of the griping stomach pains which I had had for about 6 weeks after eating a Paté Maison in Australia. I know it was the paté that did it, because only two of us had ordered it and subsequently we both had the same symptoms.
vinigar and sugar mix it up, slice the cucumber in thin slices and mix, let it stand for a little, that is usually what they serve here, it's good.
