It depends, in Northern China, there are some dumplings specialist restaurants served more than 30 kinds different fillings and usually the meat are either pork, lamb, beef, chicken or shrimps, then mix with different kinds of vegetables like, chives, yellow chives, cabbages, Chinese cabbages, shitake mushrooms, carrots, bamboo shoots, spinach, bok choy, watercress...etc. There are dumplings in soup or steamed dumplings.
In the South, Cantonese Cuisine, some restaurants even put shark's fin or bird's nest in the dumplings (both the ones serve with chicken soup or the steamed ones).
The ingredients (filling) of typical Chinese dumpling - wonton (Cantonese style), are shrimps + pork + egg white
The ingredients (filling) of typical Shanghainese dumpling - wonton, are pork + bok choy + egg white + ginger
alot of times it's pork, however I have had them with pork and chicken, and shrimp..
Basically, very finely minced pork but really depends on the cook. I've made pan fried dumplings many times and it depends on what I have available. I use pork, chicken, and even shrimp. I think Chinese restaurants use pork. Don't think beef is used at all unless it is a very American-Chinese restaurant but, to my knowledge ... I've never eaten a beef stuffed dumpling in a restaurant.

Traditionally, minced pork. But if it's from a Chinese Muslim, then it's usually beef.
It's a cooked chicken ,meat or pork ,sometimes fish(steam a little)
