Answer:
Well, you already have an excellent selection of answers here. The favorite Mexican flavoring called "al mojo de ajo" is simply a short marinade in lime or lemon and then cooked in butter and garlic (a LOT of garlic... maybe 10+ finely sliced cloves)

This is the favorite way down here to prepare both prawns (camarones gigantes) as well as red snapper (huachinango) and it is "to die for!"

I also think that lemon and dill is an excellent combination as is a mild chipotle sauce with sour cream.

Another well known Mexican style is "veracruzana" (literally "from Veracruz"). Make a sauce by adding a couple of cups of your favorite Mexican red "salsa" (one with tomatoes, green chili and>BAY!!!!!!!!!...
Old Bay seasoning or Pickling Spice
salt pepper, small amount old bay

maybe some lemon, butter rosemary etc depending on the fish
i usually keep it simple for salmon, i melt a half a stick of butter in the microwave in a glass bowl, than i add juice from half a lemon (or whole to taste), add 1-2 cloves of garlic minced, add soy sauce to taste, whisk it all up and pour it on the salmon and bake it in the oven on a foil lined pan.

for other fishes, i just omit the soy and garlic for light lemon butter sauce and add salt and pepper to taste
