Sushi rice is a shorter grained more rounded glutinous rice which helps it to remain sticky but not tacky when making sushi. The most traditional way of preparing rice for sushi is boiling the rice in water that has konbu(dried kelp) and sake (japanese rice wine) added to it.Just before the water has come to a rolling boil you remove the konbu. After the rice has been cooked it is then further seasoned with rice vinegar ,sugar and salt.
It's called zushi rice, it's a short grain rice and has more starch than most rices. It's used in sushi because it holds together better than other rices. Mirin or seasoned rice vinegar is added, which is rice vineger made with sugar.
They add seasoned vinegar to the hot rice before the cool it. That gives it the flavor.
They use sushi vinegar... it's a mixture of rice vinegar, sugar, and salt that's added to the rice as it cools. My mix is:
1/4 C rice vinegar
1Tbs sugar
1/4-1/2 tsp salt (accordig to taste)
3-4 C cooked rice
Heat vinegar to boiling and remove from heat; dissolve sugar and salt in vinegar and let cool. Add to rice and toss until rice is cool and every rice grain is coated.

For 2 cups of sushi rice, we add rice wine vinegar (3 tbs), sugar(2tbs), and salt( 1/2 tsp) to rice. And when we make rice, we use short grain rice which is for sushi, and add water and konbu to the rice.
It's a pearl rice or medium grain therefore more starchy and sticky. To that they add some mild rice vinegar and sugar. In fact if you buy rice vinegar it will tell you how to make it on the back of the bottle.
I've made my own before and it turns out great so that's how I know.
