Wanting to learn with my girlfriend, maybe a half day or full day coarse?
Answer:
The best way to learn to cook curry is to do it yourself. Get a book on Balti cooking - Hussain and Fernandez is pretty good. All you need to do this cooking is a wok and the ingredients.
A word about spices. A company called Natco do them on line and their stuff is top notch. TRS and Rajah are pretty good as well. Avoid curry powder and Gordon Ramsay. I tend not to use Scwartz if I can avoid it, but Barts spices are ok.
Balti cooking is generally easy, and you can build up from simple dishes into more complex ones as you gain experience and confidence. Indian cooking requires very fine judgement on the quantity of spices and herbs to add, but as you develop as an Indian style cook to will acquire the knack.
I have a Punjabi friend for whom I cook Rogan Josh. 47 different herbs and spices, and almonds to boot. But I started my Indian cooking career with Balti and, in 10 years, there is little in the world of Indian cookery that I would not attempt.
If you do a 1/2 or 1 day course, you wil pay out a lot of dosh and you will probably retain about 10% of the info.
Madhur Jaffrey and Lalita Ahmed are my recommendations for non-Balti, but there are oodles of web sites that will provide you with recipes, hints and tips. Authentic Indian style cooking is very different to that which you get in the average Tandori restaurant, so prepare yourself for some interesting flavour and texture experiences.
Look at the courses offered at your local adult education college. They always have courses on cooking Indian food.
go to google and research madhur jaffreys recipes. she is the queen of indian cuisine!
im not sure of you can do courses, i think you'd need to google that aswell, probably through a college or something.
try - www.realcurry.com , they do indian cooking courses.
