I ama fan of the coconut custard, ice creams, Durian is one of my favorites, alot of other fresh fruits, there are pastries, more like crepes, with various fillings, rice based ones, like thin rice pudding with fruits in it and sticky rice with variuos fillings and ingredients.
I ama former chef in Canada, worked in Singapore and travelled to both Bangkok and Chang Mai, alot of things are local and not known in other areas, do a search, I will get you started.

Well I have fried ice cream at my local takeout place. It's delicious, but I don't know how authentic.
Sangkhaya (custard) or mor gaeng, mango with sweet sticky rice, kanom chun, khao tom mutt (sticky rice with banana).

I really like Thai Coconut Ice Cream too
durian sticky rice, soooooooo good!
The Thai style iced tea is like a dessert to me, but you can drink it with your entree!
I like mango sticky rice serve with coconut cream or steamed whole pumpkin custard.
