The day before the powwow: After dicing the meat into sizes tht you can pick up with a small eating soup spoon, (3/4" x 3/4" or so), marinade or season the meat to let it flavor overnight. You can use seasoning salt, pepper, soysauce or marinade sauce or a meat tenderizer. They day before, peel and cube a 10# bag of potatoes, peel and slice a 3# bag of carrots, a couple bunches of celery, about 4 big onions (diced), cube about 5 large tomatoes. You can always add more or less according to what you want.
Put your meat into a large cookpot the day of the powwow, start the water boiling, turn the heat down and let the meat simmer for at least an hour, add the rest of the ingredients and let cook for at least 45 minutes more.
About 15 minutes before the soup is done, make a flour mixture. about 1.5 cups of flour to about 3 cups of cold water. Stir the mixture until the flour become non lumpy. Add to the soup.
Enjoy.
You can use buffalo any way you would use beef. It is tasty and very lean. I would make a buffalo stew out of it. Just "Google" a beef stew recipe and replace beef with buffalo. Wow, 60 pounds! That is quite a Pow Wow. Good luck. Sounds good!
I would brown the meat, then add my water, bring to a boil and simmer. Buffalo cooks much faster than beef and at a lower temp. Add traditional veggies and plenty of them. Potatoes, onions, bell peppers, and celery.
Add plenty of salt and pepper. I would start this early in the day so the flavors can blend. Good Luck with your powwow. Wish I was invited!
