Answer:
Best South Asian Chef: Mostly everyone is debating between Vikas Khanna and Madhur Jaffrey.
Madhur Jaffrey is a successful cookbook author
Vikas is a chef behind so many books and restaurants and his popularity is not limited to just being a chef. His personality, global appeal and so many reach out to communities world doesmake him unanimously the most famous chef south asia has produced.
I don't know if she counts as a chef, but Madhur Jaffrey is surely the best known South Asian cook and popularizer of South Asian cuisine from her cooking shows for BBC, cookbooks, movie roles, and other appearances.
Madhur Jaffrey
Sanjeev Kapoor
Tarla Dalal
Vikas Khanna

Not sure who is the most famous out of them!
Michael Pandya - Vikas Khanna - Madhur Jaffrey - Sanjeev Kapur
source: wiki

I think that the most well know would be these 4. Not sure if Madhur Jaffrey is considered a chef
Vikas is cookbooks, restaurants more based in the U.S. If that is worldwide, then he is the one.
Sanjeev Kapur is very famous in India, many TV shows etc, but not sure "worldwide"
Michael Pandya is known more as cookbook author.
Martin Yan. (Yan Can Cook)
yan is not south asian!!!!I tried to search without any big name. Maybe someone can suggest.
How about chefs from London, I am sure they have great Indian fod culture, must be some big time chefs there. I hope?
I think Vikas as he has a lot of global appeal. He is redefining the whole cuisine and culture of South Asia. I am sure we can say its him for his global appeal.
Let's face it. To be the best in the world, one has to make it big, i mean big in America; otherwise you're just a famous regional somebody.

Mratin Yan is famous in the US; in Asia he is just so-so. No other Asian cook of any Asian background can be considered world famous. Simply because there is NO Asian equivalent of a Michelin Guide.

If you can't conquer America, forget about being world famous. Whethet it's a pop singer, or a fashion designer or chef - AMERICA. IS. THE STANDARD - the reference point for everything. Haven't you heard?

"Start spreading the news
I'm leaving today
I want to be a part of it, New York, New York
These vagabond shoes
Are longing to stray
And make a brand new start of it
New York, New York
I want to wake up in the city that never sleeps
To find I'm king of the hill, top of the heap
These little town blues
Are melting away
I'll make a brand new start of it
In old New York
If I can make it there
I'll make it anywhere
It's up to you, New York, New York."
Whenever the question is about world famous, its point of reference is U.S. and ofcourse NYC. Martin Yan? How about Cardoz Floyed? Vikas Khanna?
Here is my point of reference for world famous.

Leading indian chefs
Sanjeev Kapoor
Vikas Khanna
Michael Pandya
Okay, some people don't know their geography that well. Madhur Jaffrey is who I always hear about it, but I've got to check out those other chefs.
I am not the top authority on South Asian Cooking and Bolywood. But from all my research it seems to be between MadhurJafney and Vikas Khana. We all agree it has to be America.
I researched and feel that the former is an actress and a cookbook author and Vikas is a professionally trained chef and lots of following and is behind the top restaurants and foundatoins and exactly the right word "GLOBAL APPEAL" I vote for Vikas Khanna
How about Sanjev Kapoor
Tarla Dalal
There are 3 names in Wikipeia for Indian chefs

Sanjeev Kapoor
Vikas Khanna
Michael Pandya
Veri interesting. Padma Luxmi
Superchef blog has quotes of famous chefs like Manju Malhi and Vikas Khanna
It is a moment in time when Chef Khanna lives; his talent, passion, dedication and power to stand up for so so many communities around the world has been a matter of pride for South Asia.
I do not care if he is the most famous chef, I am sure chef Vikas Khanna is one of the very important people who happens to be a chef. No other celebrity of Indian descent has been so dedicated to communities around the world.
Chef Khanna's popularity is not limited to being a chef; he is a person full of compassion and intregity.
Being famous means NOTHING if it does not have a purpose. Chef Khanna has used his celebrity status to benefit a lot of people and I am sure will always continue doing so.
I have attended his seminar and I know that the man is all heart, and it fills my heart with joy, that he is also a chef.
I think Madhur Jaffrey for cookbook
Vikas for cooking professional
Sanjeev for TV personality
Who else
I googledthe question

The answer is Vikas Khanna and MAdhur jaffrey
Nice Question....interesting to read about VikasMania

Its really nice to see that the yoinger generation is so concientious and is making an effort to to make a difference inn this world
