Answer:
First of all, it is not red dye, it is food colouring, just like how you put the green or pink colouring into the fresh cream to prepare cake frosting!

Nowadays, most restaraunts use pre-made char-siu sauce or hoi-sin sauce and mix with other seasonings, these 2 sauces contain the red food colouring so the roast pork would look red when it is done. In my Char-siu (roast port) marinade recipe, ketchup is one of the ingredients to give the colour too.
red is the chinese color of good luck or good fortuen \\it is normaly brushed on as coooking and a glave or marnade
It's not a dye, it's food coloring. Red is a lucky color in China.
it makes it taste better and look better so more ppl will buy it
i don't know, but when my mom makes bbq pork, she does that, too. she uses this red powder from the asian store and mixes it with other spices. it taste and smells really good, too.
They dont, at least not authentic Chinese food. They use chili paste or chili oil to make it red.
