every time i have chicken with green pepper and blackbean sauce in a Chinese, i hav a really bad headache the next day. no other dish seems to have this effect on me

I agree with those who think it's something about the black beans themselves! They certainly seem to be the most likely source of the problem!

It obviously isn't the MSG, because that's in ALL Chinese food.

Why don't you try soy beans (particularly the darker varieties) that haven't been fermented, then try the fermented ones in a completely different dish? That will tell you something, but the most logical thing to do is NOT to eat the stuff ever again!!

Chinese black fermented beans are usually black soy beans, but often they use one of the lighter varieties and they darken naturally during fermentation.

you either have a food intolerance or are allergic to MSG (MonosodiumGlutimate) a food additive that makes food taste more full and savoury. Either way get a test done as this may be affecting you in other ways that you are not aware of, I recently discovered that I was wheat intolerant and I didnt realise.
You are obviously having a negative affect to one of the ingredients of the soup... Ask them EXACTLY how its made and what ingredients they use to make it... then try isolate the ingredient by taking out one ingredient at a time until u find you dont have anymore headaches...

If that doesnt help, then just stop eating the soup! lol
Possibly MSG? Some people have an allergy to it and Chinese are renowned for using lots of it. But that doesn't really explain why you wouldn't have the same symptoms for other Chinese food. Strange. Best solution is probably not to eat it anymore.
They use Monsodium Glutimate (MSG) and some people are allergic to this.

dont know really, but i get a really bad headaches wen i cook anything wiv garlic in it, but onces i eaten it im ok it is wierd lol
It must be some ingredient in the Chinese black bean sauce. You may have an allergy to one or more of the ingredients.

MSG,,, its the preservative that they use in Chinese food, some restaurants can leave it out if you ask, also do not eat Chinese food if it is your first meal of the day, its suppose to be worse for the headaches
Sounds like your body doesn't like this dish, which is a shame if you like the taste. My Mum's like that with oranges....she loves the taste but they make her sick.
sounds like you have an allergy; make sure they aren't using monosodium glutamate; this has been known to give headaches, at least and is also addictive; it is illegal in prepard foods in this country(Canada); must be well labelled on packaging

Could be the lager, have you tried Chinese tea?
Or have you considered that you might have an allergy? Try avoiding the black beans - they're fermented so could be a problem. Don't understand why, if this happens every time, you keep ordering the same dish.
You might have a allergy to MSG (Mono sodium Glutamate) that is put into a lot of Chinese dishes to enhance the flavor. Many people have an allergy to MSG so it is very common. Best to inquire if they use MSG and avoid it if they do.
FIRST OF ALL WHY MUST YOU KEEP EATING IT IF IT CONTINUES TO GIVE YOU A HEADACHE (DUH). IT MAY CONTAIN TO MUCH MSG (SODIUM)
