A lof of asian people like sliced raw onions and even chllies with their rice ( rice being a staple food) -I don't think it is mainly to do with the health benefits but the fact that it is one of the cheapest vegetables around. It became part of a 'salad 'and is grown widely there in the gardens of homes and thus is always easily available. The onions are put to far more uses too in chutneys, onions fritters and sauces.
