does anyone have a good recipe for plantains, i had them in the Bahamas and they were so good,

Answers:
4 plantains, peeled
1/4 cup cooking oil
2 cups sugar
1/2 tablespoon vinegar


Cut peeled plantains in thick wedges or slices.
Fry plantain in hot cooking oil for 2 minutes, drain, and set apart.
Mix sugar and vinegar and cook on stovetop to hard ball stage.
Dip plantains in cooked syrup or pour syrup over them.
Let cool and serve.


4 ripe black plantains
1/4 cup vegetable oil
salt
lime wedges


Peel the plantains and cut them in 1/2 on a bias, then slice in 1/2 lengthwise so you have 4 pieces.
Heat the oil in a large heavy skillet over medium heat.
Fry the plantains until golden on both sides, about 5 minutes per side.
Remove to a plate lined with paper towels and sprinkle with salt.
Serve with lime wedges.

first and foremost u want to make sure u have the hard kind for this recipe. peel the skin off the plantain, cut them in medium-to-thin diagnal slices. then with a generos amount of oil fry them in a skillet until they are golden brown Fried Plantains

3 or 4 green plantains, peeled and cut at a slant, so that a medium-sized plantain yields around six pieces
seasoning to taste (garlic salt, ground pepper, ground oregano)

Directions....

Fry in a deep pan over medium to medium-high heat until the pieces begin to turn crisp. It's best to fry a few pieces at a time.

Remove the pieces. Set over a firm surface and press down on each piece with a rolling pin until it becomes flattened thin and long.

Return to the frying pan and continue to fry until they look quite crisp. Remove excess frying oil by setting over paper towels.

Use as a side dish to substitute for French fries.
You can freeze the plantain pieces before the second frying.

They will last for months in the freezer!
