Roti Canai Recipe
Ingredients :
600 g

1 teaspoon

1 cup

1/2 cup

1

Plain wheat flour

Salt

Warm water or milk

Ghee or margarine

Egg

Sugar

Method :
Sift the flour and salt together.

Knead flour, egg, sugar and ghee with water/milk (a little at a time) good enough to make a moderately soft dough or easy to handle.

Leave for 2-3 hours or overnight.

Divide dough into 8 equal parts.

Shape it into balls.

Flatten each ball with a rolling pin and fold in 1/2 teaspoon ghee.

Roll up dough and twist it into a coil. Pressing one open end onto the top.

Roll it again as thin as possible into a round shape.

Beginning at one of the open ends, roll up dough tightly and coil it again as before.

Roll out dough slowly onto lightly floured surface (to ensure air is not forced out).

Heat a pan.

Bake individually over a moderate heat.

Turn it over and spread a little ghee on it until both sides are golden brown.

Ok, I've been trying to make this for the past 5 years (since I married a Pakistani fellow). I have found the easiest thing for me is to get the frozen ones from and Indian grocery. They really taste great and all you have to do is dry fry them in a pan for about 3 minutes on each side. Swoosh the pan around a lot while you're cooking them so they don't burn, and use a towel or pot holder to press it into the pan so the edges aren't burning while the middle stays raw. Good luck.
Roti Canai

INGREDIENTS

* 600 gm plain flour
* 1 tbs salt
* 1 cup warm water
* Sugar to taste
* Ghee

Use very flat pan or flat iron griddle.
HINT: Some Asian grocery stores sell these ready-to-cook roti canai which taste just as good if you're short for time. You can look for them in the freezer section. Simply add oil to a flat pan and cook each sheet as instructed.
To prepare:

* Mix salt with flour and sieve into a bowl
* Add sugar if necessary
* Add water and knead into dough no longer sticks to hand
* Knead till it feels 'elastic'
* Divide into 8 portion, return to bowl, brush it with ghee and cover with damp cloth leaving for 1/2 hour
* Take 1 portion, spread a little ghee on top and flatten with hands
* Pick up flattened dough by the edges and swirl in circular motion until dough thins out
* Fold dough to form a square and flatten out again
* Repeat process to trap air in layers of dough
* Flatten once again and fry on heated flat pan or iron griddle till cooked
* Remove and serve hot with dhal or any curry of your choice (see also Chicken Curry, Mutton Kurma, Beef Rendang)

HINT: The thinner the roti canai, the more spongy it is. Cook over medium heat.
FYI: Roti canai is usually eaten for breakfast or morning tea and is nearly always served with curry.
i have tried making this roti for a very long time now,but not one success.i think the magic in making this is how well u knead the dough and the process of rolling it out.
i had no success till now.good luck to u...
